If you like to eat soup, you will like this recipe for patato soup. Perfect if you are cooking for one like I do.
Great with some fresh bread and butter.
What do you need to make this soup:
- One big potatoe
- 1 onion
- Some sausage (I choose a Chorizo sausage and have used about a little less then half of the one on the picture)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup milk
- 1 tablespoon flour
- stock cube and 2 cups water
- Salt, pepper and thyme
- Grated cheese (optional)


Cut the onion into small pieces and bake them in the olive oil until translucent.

Cut the sausage of your choice into small pieces and add it to the onion. Add the thyme. Softly bake the onion and sausage.

Peel the potato and cut into small pieces.
Add the water and the stock cube to the onion. Add the potato and cook for about 25 minutes.

In a separate pan melt the butter and add the flour. Stir thoroughly, this is called a roux.

Let the roux cook for a couple of minutes, but watch carefully so it doesn’t burn. Add the milk and bring to a boil.

When the potato is fully cooked, add a spoon of the roux. Stir thoroughly, check if the soup is thick enough for your taste. Add more of the roux if you would like the soup to be thicker.

Cut some fresh bread and take out some butter.

Ready to eat!

But it gets even better when you add some grated cheese which will melt into the hot soup.
